The Weston is pleased to introduce its latest venture, The Farm, set against the backdrop of the Green Mountains, in Weston, Vermont.
The first of its kind regenerative farm and food program in Vermont is using transformative agricultural practices to grow fresh produce.
The opening of The Farm marks a new endeavor to enrich the guest experience and an unmatched commitment to culinary excellence. The Farm is the newest addition to The Weston’s portfolio, which includes The Left Bank, a French-inspired bistro style restaurant and Le Spa, the on-property wellness oasis.
Set on 50 acres of land, the sprawling greenscape is a quarter-acre with a 20 x 100-foot greenhouse and 100 x 150-foot outdoor space, optimally designed for four-season farming. The Farm will cultivate produce all year with a heated greenhouse seamlessly transitioning between seasons. Committed to sustainable agricultural practices, the team has a robust seeding plan that will use ecologically restorative farming techniques and all produce will be free of pesticides, synthetic fertilizers and herbicides.
Executive Chef Bretton Combs alongside multigenerational North Dakota farmer Antoinette Kessler are collaborating to build the indoor and outdoor space for seasonal vegetables, fruits and herbs. Produce from the farm will be harvested daily and transported to The Left Bank, supplying the restaurant and heavily influencing the seasonal menu and specials each week. Additional offerings will include hand crafted herb-infused cocktail specials, fresh flavors to the renowned restaurants menu.
The Farm nurtures over 50 different crops, carefully curated to provide a farm-to-table dining experience at The Left Bank as well as to introduce an enriched array of produce that is rarely found in Vermont’s culinary landscape. Among these treasures are radicchio, French heirlooms, salsify, Black Strawberry Tomatoes, and Pusa Asita Black Carrots.
The Farm will offer immersive tours and hands-on culinary workshops providing guests with a unique opportunity to engage with the farm-to-fork journey, fostering a sense of connection during their stay at The Weston.
